Ingredients:
450g (1 lb) dried apricots
225g (8oz) granulated sugar
150ml (1/4 pint) white wine vinegar
1 teaspoon whole coriander
1 teaspoon whole allspice
1/2 teaspoon whole cloves
4 small (225g / 8oz) clean jars
Putting it together:
Put all the ingredients into a saucepan
Heat gently until the sugar has disolved
Bring to the boil then simmer for approx. 30 minutes until the apricots
are tender
Using a slotted spoon remove the apricots from the mixture and divide
between the jars
Bring the syrup to back to the boil. When thick, remove the spices and
pour the syrup over the apricots
Seal the jars while still hot
Note:
this is best eaten within 3 months
