Ingredients:
175g (6oz) butter
1 small can sweetened condensed milk
800g (1lb 12oz) icing sugar - sieved.
Putting it together:
Cream the butter in a bowl until soft.
Stir in the condensed milk.
Gradually add the icing sugar.
When all the sugar is worked in turn on to a work surface lightly sprinkled
with icing sugar.
Knead the fudge until smooth.
Roll out to about 1.25cm (1/2 inch) thick and cut into squares.
Place on a wire rack and cover with a clean tea towel or muslin.
Leave to harden overnight.
Variations:
Sultana Fudge.
Add approximately 100g (4oz) roughly chopped sultanas to the basic mixture
and knead until evenly distributed.
Chocolate Fudge.
Add 75g (3oz) cocoa with the icing sugar and mix as above.
Makes approx. 36 squares.
